Ingredients

  • 2 1/4 cups flour

  • 1 1/2 teaspoon baking soda

  • 2 teaspoons ground ginger

  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoon ground cloves

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 3/4 cup room temperature butter

  • 1/2 cup packed light brown sugar

  • 1/4 cup white sugar

  • 1/4 cup molasses

  • 1 large egg, room temperature

  • 2 teaspoon vanilla

Directions

  • Whisk together dry ingredients.
  • Cream together butter and both sugars. Add molasses and blend until combined. Add egg and vanilla and blend until combined.
  • Add dry ingredients.
  • Preheat oven to 350 degrees.
  • Using an ice cream scoop, scoop dough and then roll in crystallized sugar.
  • Place on cookie sheet covered with parchment paper.
  • Cook for 12 minutes. Let rest on cookie tray for 5 minutes then transfer to cooling rack.

Notes

  • You can also roll the dough balls in regular sugar or turbinado sugar. The sugar crystals give the cookies a nice crunch.
