When you first pull these cookies out of the oven you question if they are done enough, but you get a soft perfectly cooked chocolate chip cookie!

Ingredients

  • 1 1/4 sticks of softened butter (10 Tbsp)

  • 3/4 cup brown sugar

  • 2/3 cup superfine sugar

  • 1 large egg

  • 1 teaspoon vanilla

  • 1 3/4 cups flour, plus 2 Tbsp of flour

  • 1 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 3/4 teaspoon kosher salt

  • 6 ounces chocolate chips

Directions

  • Combine butter and sugars using a hand mixer until mixed but not fluffy, about 2 minutes.
  • Add egg and vanilla and mix until combined.
  • In a separate bowl, combine dry ingredients.
  • Combine dry ingredients with wet ingredients, hand mixing until combined.
  • Add chocolate chips and mixed until distributed evenly.
  • Scoop out dough using an ice cream scoop and roll into a ball. Place in a plastic counter so the cookie balls can be sealed and refrigerated overnight.
  • When ready to cook, preheat oven to 350 degrees.
  • Bake cookies for 13 minutes. Edges should be slightly browned and middle does not look quite cooked.
  • Let cool slightly on cookie tray then move to cooling rack.

Notes

  • If you do not have superfine sugar, you can place regular granulated sugar in your blender or food processer and blend until the consistency of superfine. It won’t take long!
