Shrimp cakes can be made for an appetizer making smaller cakes or as a main course. This recipe really brings out the shrimp flavor by minimizing the added ingredients. Delicious!

Ingredients

  • 1 lb raw shrimp – shells removed

  • 3/4 cup panko breadcrumbs

  • 3 Tablespoon chopped chives

  • 1 Tablespoon capers

  • 1/2 teaspoon salt

  • 1/4 teaspoon cracked pepper

  • 2 eggs

  • 1 teaspoon lemon zest

  • olive oil

Directions

  • Rough cut 1/2 the shrimp. I like to rough cut the thick end. Place second 1/2 of shrimp in food processor and pulse until chopped.
  • In a large bowl, gently combine all the shrimp, bread crumbs, chives, capers, salt and pepper, eggs and lemon zest.
  • Form shrimp mixture into 4 – 4 inch patties or 8 – 2 inch patties.
  • You can cook the patties either in a skillet or on the grill using a grill pad. Heat olive oil over medium high heat. Cook 2-3 minutes on each side until a light golden brown. Do not overcook the shrimp!
