minutesShrimp cakes can be made for an appetizer making smaller cakes or as a main course. This recipe really brings out the shrimp flavor by minimizing the added ingredients. Delicious!
Ingredients
1 lb raw shrimp – shells removed
3/4 cup panko breadcrumbs
3 Tablespoon chopped chives
1 Tablespoon capers
1/2 teaspoon salt
1/4 teaspoon cracked pepper
2 eggs
1 teaspoon lemon zest
olive oil
Directions
- Rough cut 1/2 the shrimp. I like to rough cut the thick end. Place second 1/2 of shrimp in food processor and pulse until chopped.
- In a large bowl, gently combine all the shrimp, bread crumbs, chives, capers, salt and pepper, eggs and lemon zest.
- Form shrimp mixture into 4 – 4 inch patties or 8 – 2 inch patties.
- You can cook the patties either in a skillet or on the grill using a grill pad. Heat olive oil over medium high heat. Cook 2-3 minutes on each side until a light golden brown. Do not overcook the shrimp!
