Sausage Tortellini Soup

minutesOne of our favorite soups! It is quick and easy to make and is delicious!
Ingredients
1 lb of loose Italian Sausage
3 carrots, peeled and sliced thinly
1 small onion chopped
2 to 3 cloves of garlic minced
3 cups low sodium chicken broth
1 – 15 oz diced tomatoes
1 cup tomato sauce
1 teaspoon Italian seasoning (add a pinch of red pepper flakes if it is not in the seasoning)
3 cups cheese tortellini
Grated parmesan cheese
1 small zucchini chopped (optional)
Directions
- Break up Italian sausage and brown in stock pan. Remove and place on paper towel to remove fat.
- Remove any extra fat from sausage and sauté chopped onion until translucent. A
- Add minced garlic and sauté for 1 minute.
- Add chopped carrots, chicken broth, tomatoes, tomato sauce and Italian seasoning. Add sausage back in to soup mixture.
- Simmer until carrots are tender, about 15 minutes.
- In a separate saucepan, cook tortellini according to directions on the package.
- Before serving, add zucchini and let cook about 5 minutes. Then add cooked tortellini.
- Top individual bowls with grated parmesan cheese.
Notes
- If you know you are going to use the soup later, wait to add the tortellini. Otherwise the tortellini will absorb some of your extra broth.
