One of our favorite soups! It is quick and easy to make and is delicious!

Ingredients

  • 1 lb of loose Italian Sausage

  • 3 carrots, peeled and sliced thinly

  • 1 small onion chopped

  • 2 to 3 cloves of garlic minced

  • 3 cups low sodium chicken broth

  • 1 – 15 oz diced tomatoes

  • 1 cup tomato sauce

  • 1 teaspoon Italian seasoning (add a pinch of red pepper flakes if it is not in the seasoning)

  • 3 cups cheese tortellini

  • Grated parmesan cheese

  • 1 small zucchini chopped (optional)

Directions

  • Break up Italian sausage and brown in stock pan. Remove and place on paper towel to remove fat.
  • Remove any extra fat from sausage and sauté chopped onion until translucent. A
  • Add minced garlic and sauté for 1 minute.
  • Add chopped carrots, chicken broth, tomatoes, tomato sauce and Italian seasoning. Add sausage back in to soup mixture.
  • Simmer until carrots are tender, about 15 minutes.
  • In a separate saucepan, cook tortellini according to directions on the package.
  • Before serving, add zucchini and let cook about 5 minutes. Then add cooked tortellini.
  • Top individual bowls with grated parmesan cheese.

Notes

  • If you know you are going to use the soup later, wait to add the tortellini. Otherwise the tortellini will absorb some of your extra broth.
