Nicely balanced salad with fresh apples and pears along with the sweet crunch of candied pecans and a light tangy dressing. Pairs nicely with many dishes.

Ingredients

  • Candied pecans or toasted fresh pecans.

  • Salad
    1/2 cup candied pecans
    5 ounces arugula or other spring green mix
    1 pear, thinly sliced
    1 apple, thinly sliced
    Honey goat cheese or feta cheese

  • Salad Dressing
    1/4 cup extra-virgin olive oil
    1 tablespoon apple cider vinegar
    1 tablespoon Dijon mustard
    1 tablespoon honey
    1 teaspoon finely grated fresh ginger ( I use the ginger in a tube)
    1/4 teaspoon salt
    Freshly ground pepper, to taste

Directions

  • To make the dressing:
    Combine with a whisk the vinegar, mustard, honey, ginger, salt and pepper.
    Whisk in the olive oil.
    Set aside.

  • To assemble salad, you can do on a large platter or individual servings to insure everyone gets a mix of the ingredients:
    Place arugula or greens down first.
    Top with a combination of the pears and apple slices.
    Top with pecans and goat cheese.
    Drizzle dressing on top!

Notes

  • The candied pecan recipe is in my blog under “Other”. I make the whole pound of pecans though you only need about a 1/2 cup for this recipe. I find the candied pecans are gobbled up pretty quickly, so I need the extras available.
