Decided to venture out with the vanilla ice cream recipe and fold in some of my lemon curd. What a wonderful combination! This ice cream is so bright and luscious! It has just the right amount of tang!

Ingredients

  • 1 cup to 1 1/2 cups lemon curd – recipe under desserts

  • Vanilla ice cream – use recipe for vanilla ice cream under desserts

Directions

  • Follow the recipe for the vanilla ice cream under desserts.
  • As soon as the ice cream is finished churning, place ice cream in a plastic container. Begin folding in 1/2 cup lemon curd into ice cream at a time. It does not have to be completely combined. Leave streaks of lemon curd. Do not overmix so the ice cream remains frozen.
  • Place in freezer and allow to freeze for at least 6 hours.

Notes

  • I prefer the homemade lemon curd. It is less expensive to make than purchase and has a nice bright color and flavor!
