Ingredients

  • 2 pounds ground beef

  • 1 pound Italian sausage

  • 1- 15 oz can chili beans with sauce

  • 1- 15 oz can small white bean or navy bean, drained

  • 2- 28 oz cans diced tomatoes with juice

  • 1 – 6 oz can tomato paste

  • 1 large onion, diced

  • 3 stalks celery chopped

  • 2 peppers – red, orange or yellow- seeded and chopped

  • 1 green chili pepper, seeded and chopped

  • 1 tablespoon bacon bits

  • 4 cubes beef bouillon

  • 1/2 cup beer

  • 1/4 cup chili powder

  • 1 tablespoon Worcestershire sauce

  • 2 tablespoon minced garlic

  • 1 1/2 tablespoon Italian seasoning

  • 2 teaspoon ground cumin

  • 2 teaspoons hot pepper sauce like Tabasco

  • 1 teaspoon salt

  • 1 teaspoon ground pepper

  • 1 teaspoon cayenne pepper

  • 1 teaspoon paprika

  • 1 teaspoon sugar

  • 1 bag corn chips

  • Shredded cheddar cheese

Directions

  • Brown beef and sausage in large stock pot. Drain excess grease.
  • Add remainder ingredients except corn chips and cheese.
  • Cook over low heat, covered for about 2 hours.
  • Adjust salt, pepper and chili powder to taste.
  • Best if stored and served the next day.
  • Top each serving with shredded cheddar cheese and corn chips.

Notes

  • If you like spicier chili, use hot Italian sausage and adjust the amount of chili peppers or hot sauce.
