Homemade pasta just takes your dish to a different level. This is one version that uses cake flour in the pasta which makes it easier to work. However, feel free to use all purpose flour for all your flour.

Ingredients

  • 2 1/2 cups all purpose flour

  • 1/2 cup cake flour

  • 1 tsp salt

  • 5 eggs

  • 1 tbsp olive oil

Directions

  • Place all dry ingredients in a food processor and pulse. If you do not have a food processor, use a whisk or fork to mix.
  • Whisk together the eggs and olive oil. Slowly pour into the food processor while it is running until the dough forms a ball. The alternative is to form a bowl in your flour and pour egg and olive oil in the center and use a fork to slowly combine the egg and with the flour.
  • Transfer dough to a floured surface and kneed the dough until it is smooth.
  • Cut the dough into four pieces and wrap each piece in plastic wrap.
  • Let rest for about 15 minutes.
  • It is easiest to use a pasta press and cutter. In the alternative, you can roll with a rolling pin on a floured surface and cut the rolled dough into strips with a knife.

Notes

  • Go ahead and cook your pasta for a couple minutes, rinse in cold water to stop the cooking process and toss with a small amount of olive oil. You can then put your cooked pasta in freezer grade ziplock bags and freeze. I like to flatten out the pasta in the bag when freezing. Then throw it in the microwave for a minute at a time until it is hot and ready to use. It is a great way to store your fresh pasta. And if you have guest over you don’t have the fuss of the hot water pot!
