My son in law asked me to make something healthy….so this is the closest I could find to healthy. Individually the ingredients have nutritional value and who can go wrong when it is dipped in dark chocolate!

Ingredients

  • 1/2 cup sliced almonds or whole almonds roughly chopped

  • 1/2 cup roughly chopped cashews

  • 1/2 cup pumpkin seeds

  • 1/2 cup unsweetened coconut flakes

  • 1/4 cup honey

  • 1 large egg, slightly beaten

  • 1 tsp vanilla

  • 1/4 tsp sea salt (or kosher salt)

  • Dark chocolate for dipping

Directions

  • Combine all ingredients in a bowl. Scoop mixture onto a parchment lined cookie sheet. I used the melon size ice cream scoop which made a nice size. Or you can use 2 tablespoons to do the same.
  • Bake at 350 degrees for 8-10 minutes, edges will start turning a golden brown.
  • After cookies have cooled, melt dipping chocolate in a bowl and dip either the bottom half of the cookie or the whole cookie in the dipping chocolate and place back on the parchment paper to cool and harden.
  • Makes about a 16 smaller cookies.
