Grilled Sausage Zucchini Boats

Ingredients

  • 2 medium size zucchini

  • 1 pound sweet Italian sausage

  • 1/2 onion chopped

  • 1/2 green pepper chopped

  • 2 cloves garlic minced

  • 1 can mild Ro’Tel diced tomatoes with green chilies

  • 1/2 teaspoon red pepper flakes

  • 2 cups cooked white rice

  • 1 teaspoon Italian seasoning

  • salt and pepper to taste

  • olive oil

  • Julienned sliced cheeses (cheddar, swiss, pepper jack or whatever you prefer or have handy)

Directions

  • Cut zucchini in half length-wise. Scoop out the center seeds making a “boat” to place the sausage mixture.
  • Sautee sausage, onion, green pepper and garlic until sausage cooked and onions translucent. Add rice, canned tomatoes, pepper flakes and season with salt and pepper.
  • Brush olive oil on zucchini and season with salt and pepper. Place zucchini directly on grills and cook until it begins to soften. Turn and grill the other side.
  • Spoon hot sausage and rice mixture into the zucchini boats and top with cheese. Cook for a few minutes until cheese is softened.
