Looking for a tasty, fluffy pancake recipe and a great way to use some of your sourdough discard? This is the recipe for you! Add a big hunk of soft butter, sifted powder sugar and maple syrup and you are all set!

Ingredients

  • 1 cup sourdough discard

  • 1 cup buttermilk

  • 1 egg, room temperature

  • 2 Tbsp melted butter

  • 1 tsp vanilla

  • 1 cup flour

  • 2 Tbsp sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

Directions

  • Combine sourdough discard, buttermilk, beaten egg, melted butter and vanilla.
  • Mix together with a whisk the flour, baking powder, baking soda, sugar and salt.
  • Add flour mixture to wet mixture and combine, but do not overmix.
  • You pancake mix is ready to cook in a hot skillet!
