minutesThis rice pudding makes a nice dessert. Feel free to top with a little whipped cream and a dusting of fresh nutmeg! Great way to use left over rice. Can be served warm or chilled!
Ingredients
1 1/2 cups cooked rice
2 cups milk
1/2 teaspoon salt
2/3 cups raisins
1 egg beaten
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1 Tablespoon butter
1 teaspoon vanilla
Directions
- Combine cooked rice, 1 1/2 cups milk, salt, and raisins in saucepan. Cook over medium heat stirring constantly until mixture thickens, approximately 15 minutes.
- Add sugar to mixture. Combine the remaining 1/2 cup milk and egg and slowly add to rice mixture while stirring.
- Continue cooking while stirring for another 2-3 minutes.
- Remove saucepan from heat and add the nutmeg, cinnamon, butter and vanilla.
