This rice pudding makes a nice dessert. Feel free to top with a little whipped cream and a dusting of fresh nutmeg! Great way to use left over rice. Can be served warm or chilled!

Ingredients

  • 1 1/2 cups cooked rice

  • 2 cups milk

  • 1/2 teaspoon salt

  • 2/3 cups raisins

  • 1 egg beaten

  • 1/4 teaspoon nutmeg

  • 1/2 teaspoon cinnamon

  • 1 Tablespoon butter

  • 1 teaspoon vanilla

Directions

  • Combine cooked rice, 1 1/2 cups milk, salt, and raisins in saucepan. Cook over medium heat stirring constantly until mixture thickens, approximately 15 minutes.
  • Add sugar to mixture. Combine the remaining 1/2 cup milk and egg and slowly add to rice mixture while stirring.
  • Continue cooking while stirring for another 2-3 minutes.
  • Remove saucepan from heat and add the nutmeg, cinnamon, butter and vanilla.
