This recipe adds so much flavor to the chicken with the addition of the garlic and herbs. The dish could be served with rice or noodles or just plain if you are watching your carbs.

Ingredients

  • 1 Tbsp olive oil

  • 2 chicken breast cut long wise in half and pounded to make it an even piece (will give you 4 pieces)

  • 1/3 cup flour

  • 2 Tbsp butter

  • 1 lb mushrooms sliced

  • 1/2 onion, chopped

  • 2 garlic cloves minced

  • 1/3 cup white dry wine

  • 1/2 cup chicken broth

  • 1 cup heavy cream

  • 2 teas Worcestershire sauce

  • 1/2 teas Dijon mustard

  • 1/2 teas onion powder

  • 1/4 teas fresh ground pepper

  • 1 teas each of fresh rosemary, thyme, sage or any combination

  • fresh parsley chopped for garnish

  • grated parmesan cheese, optional

  • salt and pepper

Directions

  • Season chicken breast with salt and pepper. Dredge in flour and shake off excess flour.
  • Sear chicken breast in heated skillet with the 1 tbsp olive oil or avocado oil until a nice brown on each side. Remove chicken to a plate.
  • Add butter to skillet along with onions and mushrooms. Saute until onions are translucent and mushrooms are golden brown. Sprinkle with salt and pepper. Add garlic and cook for one minute.
  • Add wine to deglaze the pan. Reduce wine to 1/2.
  • Add chicken broth and reduce liquid to half.
  • Add Dijon mustard, Worcestershire sauce, cream and fresh herbs except the parsley and mix. Bring to a gentle boil and let it simmer about 10 minutes or until it reduces and thickens slightly.
  • Add chicken back into the skillet and cover for 5 to 10 minutes to allow chicken to heat through and finish cooking if needed.
  • Now is the time to taste your sauce to see if it needs additional salt. Garnish with parsley and parmesan cheese.

Notes

  • If you don’t have fresh herbs, feel free to use dry herbs. Don’t make a special trip to the store, use what dry herbs you may have in your cabinet like oregano, Italian seasonings, etc.
