Creamy Boursin Cheese, Shrimp, Tomato and Pasta

minutesYou have probably seen the Boursin cheese, tomato and pasta all over the web. I have added my own little twist to this recipe.
Ingredients
1 lb shrimp, peeled and deveined and butterflied
olive oil
2 Boursin garlic and herb rounds
24 oz cherry tomatoes
2-3 cloves garlic minced
1-2 teas fresh herbs such as thyme, rosemary, sage and basil or any combination
1/2 pound pasta
chopped parsley and parmesan cheese for garnish
red pepper flakes (optional)
Directions
- Preheat oven to 400 degrees.
- Season shrimp with salt and pepper.
- Heat skillet to medium high, add olive oil and sauté shrimp until pink. Remove from skillet to plate.
- In casserole dish add tomatoes, garlic, fresh herbs and red pepper flakes. Drizzle with olive oil. Toss. Nestle the 2 rounds of Boursin cheese with the tomatoes. Bake in oven for 20 minutes or until tomatoes begin to blister.
- While the casserole is baking, cook pasta. Reserve 1 cup of the pasta water, then drain off the rest of the water.
- When the casserole is finished, pull it out of the oven and using a large spoon, smash the tomatoes and press down on the cheese rounds. Then add in 1/4 cup pasta water and mix everything together. Add in the pasta and cooked shrimp until well blended. Taste sauce to see if it needs additional salt. You can also add in additional pasta water for a thinner sauce.
- Garnish with fresh chopped basil or parsley and parmesan cheese.!
