minutesDelightful chilled soup that is great for a nice summer luncheon or bridal shower.
Ingredients
4 cups fresh blueberries
1 cup orange juice
1/2 cup sugar
1/8 teaspoon salt
1 Tablespoon lemon juice
1 pint half and half
Directions
- Combine blueberries, orange juice, sugar and salt in a saucepan and heat over medium heat until mixture boils.
- Take off heat and add 1 Tablespoon lemon juice.
- Cool blueberry mixture. When ready to serve, add the half-n-half.
Notes
- Don’t add the half-n-half and use the blueberry mixture in your morning smoothie with that homemade yogurt you made. Remember, blueberries are great for your memory! And yogurt is good for your gut!
