Delightful chilled soup that is great for a nice summer luncheon or bridal shower.

Ingredients

  • 4 cups fresh blueberries

  • 1 cup orange juice

  • 1/2 cup sugar

  • 1/8 teaspoon salt

  • 1 Tablespoon lemon juice

  • 1 pint half and half

Directions

  • Combine blueberries, orange juice, sugar and salt in a saucepan and heat over medium heat until mixture boils.
  • Take off heat and add 1 Tablespoon lemon juice.
  • Cool blueberry mixture. When ready to serve, add the half-n-half.

Notes

  • Don’t add the half-n-half and use the blueberry mixture in your morning smoothie with that homemade yogurt you made. Remember, blueberries are great for your memory! And yogurt is good for your gut!
