Caramel Popcorn

minutesThis popcorn is so addicting once you start eating! It is a great snack to make it large batches and share with others!
Ingredients
7 cups plain popcorn
1/2 cup brown sugar
1/4 cup butter
2 tablespoons light corn syrup
1/4 teaspoon salt
1/4 teaspoon vanilla
1/8 teaspoon baking soda
Directions
- Place popcorn into a roasting pan.
- Preheat oven to 250 degrees.
- In a saucepan place butter and begin to melt butter. Add brown sugar and corn syrup. Bring mixture to a boil over medium heat, stirring occasionally. Boil for 5 minutes. (Mixture looks foamy.)
- Take sugar mixture off the heat and add the vanilla, salt and baking soda and stir well.
- Pour caramel mixture over the popcorn stirring the caramel into the popcorn until popcorn is well coated. Be careful as the sugar mixture is very hot!
- Bake in oven for one hour stirring every 15 minutes.
- Once you remove the pan from the oven, stir the popcorn frequently for about 5 minutes to keep the popcorn loose and not sticking to itself.
Notes
- I typically quadruple this recipe as it is a great snack to share! I use a turkey roasting pan so it is deep enough for 28 cups of popcorn and room to be able to stir during the cooking process!
