Beef Barley Soup

Ingredients
5 slices bacon
1 pound chuck or steak cut into 1 inch pieces
2 large onions chopped
2 cloves garlic finely chopped
2 – 15 oz cans beef broth
2 cups water
1/4 cup barley
1 1/2 teaspoon paprika
1 teaspoon salt
1/4 teaspoon caraway seeds
1/8 teaspoon marjoram
3 medium potatoes, peeled and chopped
2 medium carrots, peeled and sliced
1 – 16 ounce can stewed or diced tomatoes
1 – 10 ounce package frozen peas
1 – 4 ounce can mushroom pieces
Directions
- Fry bacon. Remove from pan.
- Cook beef, onion and garlic in bacon fat over medium high heat until meat browned and onions translucent.
- Stir in broth, water, barley, paprika, salt, caraway seed, and marjoram. Simmer for 90 minutes.
- Add remaining ingredients except bacon and cook an additional 30-40 minutes.
- Add in bacon and serve!
