Homemade Granola

minutesI love to use granola on my yogurt, ice cream or just to snack on. I also like to know what ingredients are in my food and want to avoid the bad additives. This recipe is flexible and you can add in any favorite ingredients or make it healthier by adding ground flax or chia seeds or other types of seeds, nuts or dried fruit.
Ingredients
4 cups organic rolled oatmeal
1 cup nuts (such as rough chopped pecans or walnuts)
1/2 cup unsalted pepitas (pumpkin seeds)
1/2 cup shredded coconut
1 tsp fine grain salt
1 tsp cinnamon ( I like Ceylon Cinnamon)
1/2 cup maple syrup or honey
1 tsp vanilla extract
1/2 cup melted coconut oil or olive oil
2/3 cup dried fruit such as cranberries
1/2 cup dark chocolate chips
Directions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
- In a bowl, mix together oats, nuts, seeds, salt and cinnamon.
- In a separate bowl, mix together oil, honey or maple syrup vanilla. Pour over the dry ingredients and mix in well.
- Pour mixture onto cookie sheet and spread into an even layer.
- Bake in oven for 21- 24 minutes until the granola is a nice light brown color. Stir halfway through.
- When the granola has finished baking, pull out of the oven and add in the dried fruit. Then press the granola down to form an even layer. Sprinkle the dark chocolate chips on the granola and allow it to cool before disturbing. Once cooled you can break into large pieces.
- Store in closed container.
Notes
- I would encourage you to use organic oatmeal. I read regular oatmeal has 700 times more glyphosate in it than organic oatmeal. I read it on the internet so it must be true. Either way, organic is the way to go with this ingredient.
