Fresh Strawberry Pie

I love a fresh strawberry pie when these delectable berries are in season! Don’t buy the store bought glaze that has extra preservatives added to the ingredients. This glaze is simple to make yourself!

Ingredients

  • 2 pounds fresh strawberries, tops removed and sliced

  • 3/4 cup sugar

  • 1/3 cup water

  • 3 tablespoons of cornstarch
    1 Tablespoon lemon juice
    1/4 cup strawberry jam
    Pie crust- use graham cracker pie crust or precooked regular pie crust, cooled

Directions

  • Place 1 1/2 cups of strawberries, sugar, water, lemon juice and cornstarch in a blender or food processor and blend until smooth.
  • Place on medium heat and cook until mixture begins to boil. Cook for 3 minutes until mixture thickens. Remove from heat and cool.
  • Stir in strawberry jam until blended.
  • Pour coated strawberries into the pie crust. Allow to chill for several hours. Top each serving with whipped cream.

Notes

  • Though the jam is not necessary it brings the strawberry flavor up a level! Also, I used a graham cracker crust but struggled with getting the pie slice out neatly. I did not prebake the crust so maybe doing a baked graham cracker crust or store bought crust may help.
