Grilled Sausage Zucchini Boats

2 medium size zucchini
1 pound sweet Italian sausage
1/2 onion chopped
1/2 green pepper chopped
2 cloves garlic minced
1 can mild Ro’Tel diced tomatoes with green chilies
1/2 teaspoon red pepper flakes
2 cups cooked white rice
1 teaspoon Italian seasoning
salt and pepper to taste
olive oil
Julienned sliced cheeses (cheddar, swiss, pepper jack or whatever you prefer or have handy)
Directions
- Cut zucchini in half length-wise. Scoop out the center seeds making a “boat” to place the sausage mixture.
- Sautee sausage, onion, green pepper and garlic until sausage cooked and onions translucent. Add rice, canned tomatoes, pepper flakes and season with salt and pepper.
- Brush olive oil on zucchini and season with salt and pepper. Place zucchini directly on grills and cook until it begins to soften. Turn and grill the other side.
- Spoon hot sausage and rice mixture into the zucchini boats and top with cheese. Cook for a few minutes until cheese is softened.
