Soft Chocolate Chip Cookies

minutesWhen you first pull these cookies out of the oven you question if they are done enough, but you get a soft perfectly cooked chocolate chip cookie!
Ingredients
1 1/4 sticks of softened butter (10 Tbsp)
3/4 cup brown sugar
2/3 cup superfine sugar
1 large egg
1 teaspoon vanilla
1 3/4 cups flour, plus 2 Tbsp of flour
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
6 ounces chocolate chips
Directions
- Combine butter and sugars using a hand mixer until mixed but not fluffy, about 2 minutes.
- Add egg and vanilla and mix until combined.
- In a separate bowl, combine dry ingredients.
- Combine dry ingredients with wet ingredients, hand mixing until combined.
- Add chocolate chips and mixed until distributed evenly.
- Scoop out dough using an ice cream scoop and roll into a ball. Place in a plastic counter so the cookie balls can be sealed and refrigerated overnight.
- When ready to cook, preheat oven to 350 degrees.
- Bake cookies for 13 minutes. Edges should be slightly browned and middle does not look quite cooked.
- Let cool slightly on cookie tray then move to cooling rack.
Notes
- If you do not have superfine sugar, you can place regular granulated sugar in your blender or food processer and blend until the consistency of superfine. It won’t take long!
