2 1/4 cups flour
1 1/2 teaspoon baking soda
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup room temperature butter
1/2 cup packed light brown sugar
1/4 cup white sugar
1/4 cup molasses
1 large egg, room temperature
2 teaspoon vanilla
Directions
- Whisk together dry ingredients.
- Cream together butter and both sugars. Add molasses and blend until combined. Add egg and vanilla and blend until combined.
- Add dry ingredients.
- Preheat oven to 350 degrees.
- Using an ice cream scoop, scoop dough and then roll in crystallized sugar.
- Place on cookie sheet covered with parchment paper.
- Cook for 12 minutes. Let rest on cookie tray for 5 minutes then transfer to cooling rack.
Notes
- You can also roll the dough balls in regular sugar or turbinado sugar. The sugar crystals give the cookies a nice crunch.
