Just the Right Heat Chili

2 pounds ground beef
1 pound Italian sausage
1- 15 oz can chili beans with sauce
1- 15 oz can small white bean or navy bean, drained
2- 28 oz cans diced tomatoes with juice
1 – 6 oz can tomato paste
1 large onion, diced
3 stalks celery chopped
2 peppers – red, orange or yellow- seeded and chopped
1 green chili pepper, seeded and chopped
1 tablespoon bacon bits
4 cubes beef bouillon
1/2 cup beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
2 tablespoon minced garlic
1 1/2 tablespoon Italian seasoning
2 teaspoon ground cumin
2 teaspoons hot pepper sauce like Tabasco
1 teaspoon salt
1 teaspoon ground pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon sugar
1 bag corn chips
Shredded cheddar cheese
Directions
- Brown beef and sausage in large stock pot. Drain excess grease.
- Add remainder ingredients except corn chips and cheese.
- Cook over low heat, covered for about 2 hours.
- Adjust salt, pepper and chili powder to taste.
- Best if stored and served the next day.
- Top each serving with shredded cheddar cheese and corn chips.
Notes
- If you like spicier chili, use hot Italian sausage and adjust the amount of chili peppers or hot sauce.
