This a a simply elegant dish. Quick to prepare and is loaded with flavor!

Ingredients

  • 8 oz thick filet fish such as cod, red snapper, cobia

  • 3 garlic cloves, sliced

  • 3 Tbsp olive oil

  • 2 Tbsp capers

  • 6 to 7 kalamata olives, pitted and sliced

  • 2/3 cup dry white wine

  • 1/4 cup chopped parsley

  • 1/8 tsp crushed red pepper flakes

  • 1 cup marinara sauce

  • kosher salt and fresh cracked pepper

Directions

  • Season fish with salt and pepper.
  • In a skillet, heat olive oil. Add fish and garlic. Sear 1 to 2 minutes each side.
  • Pour in the white wine, capers, olives, parsley, red pepper flakes, tomato sauce.
  • Cover with the lid and reduce heat to low. Simmer 8 to 10 minutes.
  • Place on serving platter and sprinkle with chopped parsley flakes.
