Ingredients
8 oz thick filet fish such as cod, red snapper, cobia
3 garlic cloves, sliced
3 Tbsp olive oil
2 Tbsp capers
6 to 7 kalamata olives, pitted and sliced
2/3 cup dry white wine
1/4 cup chopped parsley
1/8 tsp crushed red pepper flakes
1 cup marinara sauce
kosher salt and fresh cracked pepper
Directions
- Season fish with salt and pepper.
- In a skillet, heat olive oil. Add fish and garlic. Sear 1 to 2 minutes each side.
- Pour in the white wine, capers, olives, parsley, red pepper flakes, tomato sauce.
- Cover with the lid and reduce heat to low. Simmer 8 to 10 minutes.
- Place on serving platter and sprinkle with chopped parsley flakes.
