Creamy Salmon, Spinach and Tomato Pasta

Ingredients
4 Salmon filets
Salt, pepper and either garlic powder or Italian seasonings
2 Tbsp olive oil
1 Tbsp butter
1/2 small onion chopped
2 cloves of garlic minced
1/2 pint cherry tomatoes cut in half
1 1/3 cups reduced sodium chicken broth
1 cup heavy whipping cream
1/2 teaspoon Italian seasoning
black pepper
1/2 cup grated Parmesan cheese
1-2 cups fresh baby spinach
1/8 tsp red pepper flakes (optional)
Directions
- Pat salmon dry with paper towel, then season with salt, pepper, garlic powder and/or Italian seasonings.
- Heat skilled over medium high heat, add olive oil and when hot, add salmon. Cook salmon 4-5 minutes per side. Remove to a plate and set aside.
- Add butter to same pan. Add onion and cook at medium heat until onions are translucent. Add garlic and cook an additional minute, stirring so garlic does not burn.
- Add chicken broth to the pan and scrape the bottom to work loose any brownings. Then stir in cream.
- Let the mixture cook over medium low heat for 2-4 minutes, stirring frequently. Add Italian seasoning and pepper to taste and Parmesan cheese. For a thicker sauce make a slurry of 2 Tbsp water and 1 Tbsp of cornstarch. Add to sauce.
- Add spinach and cook another minute or two until it begins to wilt. Add cherry tomatoes and stir. Return salmon to the skillet.
- Serve over cooked pasta.
