Delicious rolls made with cinnamon and sugar filling are a perfect breakfast item and can be frozen individually for a quick breakfast. Depending on your personal taste, you can add raisins or other delectable morsels before rolling your dough.

Ingredients

  • 1 to 1 1/4 cups scalded milk

  • 1 stick butter cut into slices

  • 1/4 cup sugar

  • 2 1/4 teaspoon yeast

  • 4 1/2 cups flour

  • 1 teaspoon salt

  • 2 eggs lightly beaten

  • 6 tablespoons soft butter

  • 1 cup sugar

  • 2 teaspoons cinnamon

  • 1/4 teaspoon nutmeg, optional

  • raisins, optional

Directions

  • Scald milk by heating milk on stove stop until light bubbles form on edge of milk or to 170 degrees.
  • Take milk off heat and add 1/2 cup (1 stick) butter.
  • When temperature of milk reduces to 100 degrees F, then add to bread machine.
  • Add 1/4 cup sugar and yeast.
  • Add flour using spoon and sweep method and add to liquid.
  • Add 1 teaspoon salt.
  • Add eggs lightly beaten.
  • Bread machine setting should be for dough. You can use the quick dough setting.
  • When dough is done, roll dough into rectangular shape approximately 18 inches by 10 inches.
  • Spread softened butter onto dough.
  • Sprinkle with cinnamon/sugar mixture. Then sprinkle with raisins if desired.
  • Roll into log starting with long end. Pinch edge of dough to roll to seal.
  • Cut into 12 equal parts and place into a buttered rectangular pan.
  • Lightly cover with plastic wrap that has been sprayed with a cooking spray like Pam. Then place a dish towel on top of plastic wrap.
  • Let rise until double. Remember the yeast needs a temperature of at least 70 degrees so watch where you set your dough.
  • Preheat oven to 375 degrees. Bake rolls for 12 to 20 minutes until a light golden brown or until internal temperature reaches 190 degrees.
  • Turn cinnamon rolls onto a cooling rack to cool.
  • Enjoy the rolls plain or with icing. To make icing glaze, combine 1/2 teaspoon vanilla with 2-3 tablespoon milk and 1 cup confectioner sugar or enough to make a consistency to spoon over cinnamon rolls.

Notes

  • Spoon sweep method to measure flour involves taking a spoonful of flour and dusting it into your measuring cup until flour is over the top of the measuring cup then taking a knife to level it off. You can cook the rolls in a 9 X 12 inch pan or large muffin tins.
