Creamy Salmon, Spinach and Tomato Pasta

This creamy pasta dish is a simple dish to prepare but is loaded with flavor and has a beautiful presentation!

Ingredients

  • 4 Salmon filets

  • Salt, pepper and either garlic powder or Italian seasonings

  • 2 Tbsp olive oil

  • 1 Tbsp butter

  • 1/2 small onion chopped

  • 2 cloves of garlic minced

  • 1/2 pint cherry tomatoes cut in half

  • 1 1/3 cups reduced sodium chicken broth

  • 1 cup heavy whipping cream

  • 1/2 teaspoon Italian seasoning

  • black pepper

  • 1/2 cup grated Parmesan cheese

  • 1-2 cups fresh baby spinach

  • 1/8 tsp red pepper flakes (optional)

Directions

  • Pat salmon dry with paper towel, then season with salt, pepper, garlic powder and/or Italian seasonings.
  • Heat skilled over medium high heat, add olive oil and when hot, add salmon. Cook salmon 4-5 minutes per side. Remove to a plate and set aside.
  • Add butter to same pan. Add onion and cook at medium heat until onions are translucent. Add garlic and cook an additional minute, stirring so garlic does not burn.
  • Add chicken broth to the pan and scrape the bottom to work loose any brownings. Then stir in cream.
  • Let the mixture cook over medium low heat for 2-4 minutes, stirring frequently. Add Italian seasoning and pepper to taste and Parmesan cheese. For a thicker sauce make a slurry of 2 Tbsp water and 1 Tbsp of cornstarch. Add to sauce.
  • Add spinach and cook another minute or two until it begins to wilt. Add cherry tomatoes and stir. Return salmon to the skillet.
  • Serve over cooked pasta.

Notes

  • Pairs nicely with the fresh pasta recipe.
